Essa é uma receita de frango, com a qual eu cresci.

Eu sou filha de Italianos e na minha casa da infância, minhas duas avós tinham galinhas, coelhos e uma horta.

Então, essa receita de frango, que a gente às vezes comia com coelho...

...têm o frango, que elas matavam e os legumes e as ervas que elas colhiam.

É uma receita muito importante pra mim.

Porque eu cresci comendo isso. Porque eu cresci vendo elas cozinhar. Porque eu cresci vendo elas colher.

Porque eu lembro muito bem das mãos delas todas enrugadas.

Então, essa receita é uma homenagem às minhas avós e à todas avós cozinheiras...

...imigrantes, que carregaram as suas receitas e as suas histórias ao redor do mundo.

E que passaram por momentos tão difíceis.

Então agora vamos com a lista de ingredientes....

Claro que você pode comprar cortado.

A gente criava frango, matava frango e tinha que cortar.

Esse é um frango orgânico caipira. Vamos cortar o frango de um jeito simples. Não sei se tem muitos jeitos de cortar o frango...

...mas esse é o jeito que eu corto.

Seguramos o frango por uma pata. E ele sozinho vai mostrar o caminho.

(PAOLA) Têm uns presentinhos aqui dentro. As patitas... (JASON) Úhhh. Que mais têm?

Um pescoço, maravilhoso. Tem uma moela.

(JASON) Você vai usar esses pedaços também? (PAOLA) Tudo.

(PAOLA) Eu tô levantando assim pra que vocês possam ver, até aonde cortamos.

A faca, ela não corta nenhum osso. Ela só passa entre os ossos.

(PAOLA) Asinha. Mesma coisa.

Aqui, tem uma parte que eu gosto de fazer com tesoura. É muito mais fácil.

E agora, para separa o peito, o jeito mais simples é fazer... no lugar de fazer desse lado, é virar e fazer desse.

Terminamos com dois peitos. Duas asinhas e duas coxas e sobrecoxas.

Mas para é receita na minha casa, o frango se cortava menorzito. Porque éramos muitos e aí rende mais.

Então vamos cortar esse peito pela metade.

Aonde tem essa gordurinha, se junta a coxa da sobrecoxa. Se você passar a mão, você consegue sentir a junta de um ossinho com o outro.

E é sempre aqui, aonde tem essa linha de gordura.

As asinhas. Vamos deixar elas assim inteiras.

Cenas fortes de um animal morto, que a gente tá cortando em pedaços.

E eu falo isso porque faz tempo que a gente não tem contato com bicho morto.

Geralmente a gente compra os pedacinhos na bandeja de isopor do supermercado e não faz muita ideia que isso veio de um animal.

Então é bom lembrar que isso aqui é um animal que tinha uma vida.

E é bom também vocês darem uma olhada, que tipo de vida tiveram os animais que vocês comem.

Muito intenso talvez para uma receita de frango, mas é importante.

Temos o frango cortado em, 1, 2, 3, 4, 5, 6, 7, 8, 9, 10 pedaços.

Vamos temperar com sal e pimenta e fazer a receita.

E essas partes aqui você pode guardar no freezer ou na geladeira e faz um caldo de frango delícia.

Esse tipo de receita, não muito assim uma receita.

Que se você não tem cenoura não vai dar certo, se você não tem alho-poró não vai dar certo.

Essa receita é quase um "Pollo à la Cacciatore en Bianco".

Bianco quer dizer quando não tem molho tomate ou quando não tem tomate.

Então se tiver esse tomate e no lugar de alcaparras... Se bem que poderia ter alcaparras, também poderia ter azeitonas.

Seria um Frango Cacciatore.

E o que é um frango Cacciatore. É um frango dos caçadores. É uma receita que vem da Toscana (Região da Itália Central)...

...aonde tem frango e as coisas que tinham por perto. E as minhas avós plantavam esses ingredientes tão básicos para a cozinha.

Provavelmente cebola não. Mas cenoura, salsão e alho-poró com certeza.

Então, se você não tem cenoura ou não gosta. Se você não tem salsão ou não gosta, se você não tem alcaparras ou não gosta...

...tudo bem. O mais interessante aqui que a gente vai aprender é como montar o prato, como fazer o prato.

Dourar o frango pra trazer muito sabor. Quanto tempo cozinhar e.... como deixar ele bem suculento.

Vou cortar os legumes.

Esse salsão é muito fresco. Mas às vezes o salsão tem uns pelitos. Pra saber se ele está com esses pelitos, a gente corta um pedacinho e puxa.

Porque encontrar isso numa comida não é muito legal, sobretudo pra uma salada por exemplo.

O salsão é feito desses pelinhos, então se a gente quiser ficar aqui a noite inteira tirando, fica.

Mas, a ideia é tirar os que saem mais fácil.

Então, vou cortar os legumes. E a cebola eu não vou cortar muito pequena. Eu vou cortar em pétalas. Em oito.

E o alho-poró. Tem que tomar cuidado com o alho-poró porque e fica muita terra. Então o melhor jeito de limpar é...

...fazendo um corte pequenininho aqui na parte de cima e aí vocês colocam ele de molho em um pouquinho de água.

Eles soltam a terrinha e a gente usa. Isso que eu to fazendo se chama Mise en place.

Isso que eu tô fazendo se chama Mise en place. Que não é mais que colocar em um lugar tudo que a gente vai usar para fazer o prato.

E é uma forma que eu gosto muito de trabalhar. Claro, eu sou uma cozinheira profissional, mas na minha casa eu faço igual.

E olha. Eu tenho uma tigela que eu vou colocar o restinho das coisas que eu não uso.

Depois vai pra nossa compostagem. O jardineiro em casa é o Jason.

E eu vou montando tudo que eu preciso para cozinhar. Você vai sujar menos a cozinha e vai cozinhar mais rápido

E a tábua gente, é para cortar. Não é para estocar ingredientes.

Então se você vai cortando cebola, e deixa na tábua. Corta cenoura. Deixa na tábua. Corta salsão e deixa na tábua...

...depois você não tem tábua para cortar as coisas.

Eu li nos comentários em outros vídeos: "Paola, eu não consigo ervas frescas. Posso cozinhar com ervas secas?"

Poder pode. Não é a mesma coisa.

E como essas três, louro, alecrim, sálvia e orégano por exemplo.

São ervas bastante resistentes pra ter em vasinhos. Elas não precisam de muito cuidado.

Não são tão sensíveis como, sei lá, o manjericão e a salsinha que são mais chatinhas para cultivar.

Muda tudo. Quando as ervas são frescas a quantidade de sabor que elas carregam e a emoção que elas deixam num prato...

...é gigantesca. Não compara com aquele saquinho meio esquecidinho no fundo do armário de louro, que tem cheiro de...

...armário aonde você esqueceu uma meia molhada.

Então para mim, as ervas são sempre frescas se possível.

Então vamos cozinhar. Vamos fazer esse franguinho. Vamos começar a dourar o frango, bem, bem, bem douradinho, pra ganhar muito sabor.

E sabe aquelas partes que eu falei que ia guardar para um caldo? Eu não vou guardar, nem fazer um caldo.

Vou dourá-las igual, porque eu lembro que meu avô Lino comia essas partezinhas assim com a mão e tirava toda a carninha que ficava grudada no osso.

Então eu vou fazer pra ele. Ele não tá, mas eu vou fazer também porque eu sei que o Jason vai comer.

(PAOLA) Né Jason? (JASON) uhum (concorda).

Então vamos ligar o fogão. Vamos esperar ela falar que está quente. Colocar azeite de oliva.

Tem algumas pessoas que colocam em esse momento....

Está vendo como ela fala que está quente?

Algumas pessoas passam as peças de frango, em um pouquinho de farinha. Não é uma má ideia, porque ela ajuda a engrossar o molho depois.

Mas não precisa se não quiser. Eu não vou colocar.

Pra gente conseguir dourar, pra ter cor, tem que ter espaço para dourar. Se eu coloco uma carne numa panela muito pequena...

...ou o frango muito, muito apertado, sem espaço para o calor, pro vapor que solta evaporar, não vai dourar, vai ficar meio fervido.

Pra gente dar bastante sabor à esse frango, nessa caçarola de frango, a gente quer que doure. Que tenha bastante cor e caramelização.

Então tomem cuidado para usar uma panela que tenha espaço suficiente para cozinhar todo esse frango.

Não fiquem mexendo, porque se você ficar mexendo ele não doura.

Às vezes é bom de tanto em tanto dar uma chacoalhada na frigideira para ele desgrudar e cozinhar lentamente...

...assim, uns 10, 15 minutos, para que fiquem bem dourado. Vamos esperar 10 minutos.

Vamos tirar o frango que ficou super dourado. Obviamente ele tá cru ainda. Ele está apenas muito dourado.

Então, também dá pra fazer isso em duas vezes. Se você não tem uma panela que possa dourar o frango de uma vez só. Faz uma parte, tira e faz a outra.

Agora eu vou tirar e nesse fundo que ficou, eu vou cozinhar os legumes um pouco.

Tem azeite de oliva e tem a gordura do franguinho. Cebolas.

Um pouco de sal. Salsão. O alho-poró.

Todos os legumes. E agora eu vou colocar o fogo um pouquinho mais baixo pra que não queimem. Para que eles consigam soltar um pouquinho de água.

Vou pôr o alho. 3,4,5,6,7,8 dentes de alho. Depende de quanto alho você gostar.

Pensando que, vai cozinhar uns 40 minutos e o alho não vai fritar, ele apenas vai cozinhar.

Então vai ficar macio e doce, não vai ficar frito com gosto de alho forte.

Que mais?

(JASON) Vinho? (PAOLA) Não! Ainda não.

(JASON) Oh por favor, eu quero vinho. (PAOLA) Sim, mas agora não.

Eu abaixei o fogo, tenho o frango aqui. Agora que que eu vou fazer? Aquela meia tampa. Lembra da meia tampa?

Pra que esses legumes, no lugar de fritar e dourar, eles cozinhem lentamente. Não queremos eles fritos nem muito dourados.

O que queremos é que soltem um pouquinho da água. Para eles soltarem a água, tenho que por um pouco de tampa.

Deixo assim uma frestinha aberta para eu cheirar o que está acontecendo dentro.

Fogo baixo, então não vão fritar, eles vão lentamente cozinhar. Uns 10 minutos.

Então, em 10 minutos ele dourou, em 10 minutos os legumes, vão murchar, soltar água, caramelizar.

E aí a gente coloca o frango de volta, o vinho que o Jason quer e vamos fazer a massa.

Porque na minha casa esse prato se comia com massa fresca.

Podemos ver que a cebola tá quase transparente, não tá cozido, cozido. Apenas amaciou-se um pouco com o calor.

Aumenta o fogo. Por que aumenta o fogo? Porque agora eu quero voltar a caramelizar tudo isso...

...porque quando eu coloque o vinho, vai fazer Tsssii(Som de vapor levantando) e toda essa proteína e toda essa caramelização que ficou no fundo da panela...

...vai se soltar no vinho e fazer o molho. Essas mãozinhas de frango, elas carregam muito colágeno...

...e isso também vai deixar o molho mais aveludado. São bobagens, mas não são tão bobagens.

Se além de ficar muito gostoso de comer para quem gosta, a quantidade de colágeno que essas mãozinhas têm, deixam o molho muito mais sedoso, aveludado e com mais textura.

Outra coisa que deixa o molho muito bom e se usou por muito tempo, muito antigamente para engrossar molhos, é o fígado do frango.

Que vai entrar agora. uiii (som de assobio)

A água que ele soltou. Não vamos desperdiçar nada.

Vou deixar ganhar temperatura de volta e vou pegar o vinho.

(JASON) Eu posso te ajudar com o vinho? (PAOLA) Pode. Eu te dou uma taça de vinho agora?

(JASON) Eu não tenho mãos, porque...heheheh... Eu estou operando câmera. (PAOLA) Então não beber agora. Vai ter que esperar.

(PAOLA) Vamos pôr o vinho.

(PAOLA) Não quer por vinho, põe água.

Vamos esperar que o nosso nariz fale que o cheiro de álcool foi embora.

Quando sobe o cheiro, das ervas, do frango e dos legumes, é porque o álcool evaporou.

Eu vou colocar um pouquinho de água, uma ou duas colheres de sopa de alcaparras, se você quiser.

Ou de azeitonas se você quiser, ou nada.

Abaixa o fogo, meia tampa, meia hora. Importante agora baixar o fogo.

Porque se o fogo ficar muito alto, o frango vai ficar duro.

O calor deixa as coisas meio assim assustadas. Quanto mais forte o calor, mais o bichos se contraem.

O fogo alto é muito bom para dourar. Agora, pra carne se amaciar no osso, fogo baixo e mais tempo.

Se vão usar alcaparras ou azeitonas, lembrem-se que elas têm bastante sal, que são conservadas em salmoura, então não precisa acrescentar tanto sal.

Eu coloquei sal no frango e na cebola. No tudo, eu ainda não coloquei, porque entraram as alcaparras.

Então daqui uns 15, 20 minutos, antes de estar quase pronto, vou provar e ver se falta sal.

E agora enquanto isso, faz o que tem que fazer. vamos fazer massa fresca.

(JASON) Quê? Eu? hihihi. Por que não meu amor!

Pra fazer a massa fresca, o melhor é o mármore. Se você não tem em casa, você pega o... já falei isso.

Você pega um de uma caçamba, um mármore velho que você tenha pegado por ali. Que você encontre na rua.

Que é maravilhoso para fazer massa. E aí você pega o marido, que carregue o mármore pesado.

(JASON) Éééé pesado. (PAOLA) Eu sei.

Não precisa ser marido. Pode ser uma mulher forte também. Somos feministas.

Marido pra que?

(JASON) Desculpe? (PAOLA) Nada, chega (rindo)

Eu vou limpar o mármore. Não precisa filmar eu limpando o mármore.

Vamos fazer a massa.

Claro que a farinha italiana, chiquésima que a gente encontra em alguns mercados é boa. Muito, muito boa.

Mas vamos usar farinha de trigo comum, normal.

E uma dica para que ela fique, que a massa fique com pouquinho mais de dente, uma textura boa, é colocar uma pitadinha de sêmola de trigo na mistura de farinha

Ovos, orgânicos. Se possível.

Sal. Há controvérsias. Há quem coloque sal na massa, há quem não coloque sal na massa.

Eu tenho milhares de livros de cozinha. Muitos usam uma pitada de sal na massa e outros não usam nada porque o sal da água é suficiente.

Então, como somos sete pessoas aqui, gravando essa belezura de programa, eu tenho aqui 300 gramas de farinha e 3 ovos.

Que dá pra servir uma opção de acompanhamento de massa.

Se for um pratão de massa, um pouco mais. Eu vou passar por uma peneira, porque eu sempre passo a farinha por uma peneira.

Pra ver se têm coisinhas que eu não quero

Agora eu tenho essa ferramenta, mas se você não tem essa ferramenta não usa.

Eu vou por um pouquinho de Semolina, mais ou menos uma colher de sopa nesses 300 gramas de farinha.

Fazer um furinho aqui no meio.

Ovos.

Vou por uma pitada de sal. E agora com o garfo, eu vou começar a mexer os ovos, e começar a trazer a farinha das bordas até o centro...

...até ter o ponto da massa que eu quero. O que pode ser que não precise toda a farinha.

Ou seja, têm 300 gramas de farinha e três ovos, mas os ovos não têm sempre o mesmo tamanho.

Então pode ser que às vezes eu use toda a farinha, pode ser que às vezes você não use toda a farinha.

Eu amo fazer isso. Pode fazer a massa no processador Paola? Pode. Você não vai me falar que o processador é tão poético quanto isso aqui.

E agora, o ponto tá assim mais durinho e os ovos não vão fugir. Vou usar as mãos.

Sobrou farinha. Por enquanto sobrou farinha, porque eu vou trabalhar um pouco a massa eu pode ser que eu use mais um pouquinho.

A massa de pasta, tem que ser mais pra durinha. Quando a massa é muito mole, depois que você corta, ela tende a entortar.

Ter uma peneira por perto ajuda muito porque a gente vai pegar essa farinha que sobrou e colocar dentro dessa peneira.

Peneiramos e ela sai limpinha e usamos tudo.

Então eu vou trabalhar isso aqui uns 5 minutos. Quanto mais a gente trabalha a massa, mais elástica ela fica...

...e também quanto mais a gente trabalha a massa, mais a gente ativa o glúten na farinha.

Quando ela tá assim, durinha... Dá pra ver que ela não tá molenga. (som da mão batendo na massa) Tá durinha.

Precisamos deixá-la descansar por pelo menos meia hora.

Eu tenho a maquininha de abrir massa, mas eu acho que a ideia é que você possa fazer sem ter a maquininha de abrir massa.

Um desses aqui custa R$30,00. Então vou abrir do jeito que se abria.

Hoje eu vou usar um formato que a minha vó Mimi fazia muito, que ela chamava de "Ravioli de Povere" (Ravioli de pobre)

Ela é viva, mas ela não cozinha mais tanto quanto antes. Ela cortava em formato de ravioli, só que sem recheio.

E assim aqui, eu vou ficar uma meia hora até chegar na massa fininha.

(JASON) Você quer que eu ajudo? (PAOLA) Eu quero.

O que se fala é que a gente tem que ver a luz através dela.

Pronto. Temos uma "Sfoglia" (folha muito fina de massa de farinha de trigo), e vamos cortar a massa. Vamos cortar do jeito que você quiser.

Eu tenho uma rodinha de ravioli, mas se você não tiver, você corta com uma faca.

A Mimi, minha vó, cortava mais ou. menos assim.

Eu fiz questão de fazer o prato do jeito que era na minha casa, do jeito que eu lembro, pra fazer uma homenagem.

Mas claro que você não precisa se você não quiser fazer pasta caseira.

Esse prato fica delicioso com arroz ou com macarrão, que você compra, ou com umas batatas assadas. Ou com uma salada

Eu vou cozinhar a massa que fizemos, em água muito salgada,

(JASON) E quanto tempo precisa para cozinhar a massa fresca? (PAOLA) Ela tá tão fresca. Acho que 3 minutos.

(PAOLA) A gente vai deixar ferver e quando... enquanto ela cozinha vamos fazer um molhinho bem rápido.

De sálvia fresca, manteiga, pimenta do reino e uma pitadinha de sal.

E vou cortar um pouco de salsinha para finalizar o frango. Pra que tenha uma cor fresca por cima. Rústica.

Imperfeita! Que nem eu.

(PAOLA) Era pra você experimentar, mas você não pode porque você está com câmera na mão.
