I understand the meaning of the phrases but not the grammar.

Die Fotos habe ich nicht gemacht, die sind von einem Fotograf.

The second die is a relative pronoun. You could replace it with welche.
Die Fotos habe ich nicht gemacht, die sind von einem Fotograf.
The second die is simply an article, it stands for die Fotos. Actually you could make two main clauses out of this.
Die Fotos habe ich nicht gemacht. Die (Fotos) sind von einem Fotografen.
Please note that Fotograf belongs to the n-declension.

In spoken language us Germans are a bit sloppy with the endings, especially with words ending on -en. Often we do not properly enunciate it but drop the e or even both letters. So you might hear people say des/dem/den Fotograf but it’s not correct.
