Poll and polling

I’d like to know the difference between polling and poll as a noun.

A sentence below:
I want to thank you for looking over our polling.
Is it okay to use poll instead of polling in that sentence?

You could in this sentence but it would mean something slightly different. Polling refers to conducting a poll as an ongoing process. Polling here is referring to polling “data” as in the information that has been collected from an ongoing poll. So it is essentially saying “I want to thank you for looking over the information that has been collected in the poll that we are conducting”
