Dan opeens alsnog

I know ‘opeens’ means ‘all of a sudden,’ but I’m trying to better understand how a phrase like ‘dan opeens alsnog’ comes together. The best English translation I can come up with is ‘just like that’ (zoals met de knip van de vingers). Or does it have more the feeling of ‘uiteindelijk’ (finally!).

examples:
over planten:
En net als ik ze wilde opgeven (in juli of zo) begonnen ze dan opeens alsnog enorm te groeien.
And just as I was about to give up on them (in July or thereabouts), just like that they started growing like crazy.

over stotteren:
Soms stokten de woorden in zijn keel en bleef hij steeds dezelfde lettergreep herhalen, als een kras op de plaat, terwijl we allemaal wachten tot hij de volgende lettergreep dan opeens alsnog uitstootte.
Sometimes the words would get stuck in his throat and he would keep repeating the same syllable over and over like a scratched record, while we all waited until, just like that, he would get the next syllable out.

Oppeens alsnog, the best way I can come up with right now to translate this is as follow:

All of a sudden (when you didn’t expect it to happen anymore) it eventually still happens.

Hopelijk heb je hier iets aan, het kan zijn dat oppeens alsnog iemand met een betere vertaling komt ^^

dan opeens = then suddenly
alsnog = yet still; unexpectedly

I think I’m better understanding how ‘dan opeens alsnog’ works grammatically in Dutch, and how to make grammatical sense of it in English:
then suddenly and unexpectedly (dan plots en onverwachts).

The following translates smoothly into English: an unrecorded show can then suddenly show up unexpectedly in the list of recordings

Elke zondag komt er een serie maar er komt dan ook wat anders rond die tijd. Ik kwam er achter dat je series kon opnemen en heb dat dus ingesteld. Later op de avond wou ik 'm kijken en zag dat ie 'm niet had opgenomen, de afgelopen twee zondagen wel. Nu heb ik deze aflevering niet kunnen kijken en programma gemist kan niet. Een paar dagen later kan zo’n niet opgenomen programma dan opeens alsnog in de lijst met opnames verschijnen. In een grijze balk. En als je die dan probeert te bekijken krijg je de melding dat de opname niet goed is.

Every Sunday a series comes on, but other shows come on around this time too. It was my understanding that you could record a series and so I set it to do that. Later in the evening I was about to watch it and saw that it hadn’t recorded, but the last two Sundays it had. Now I wasn’t able to watch this episode [and seeing it (on the web site Programma Gemist?) isn’t possible]. And then if you try to view it, you get the message that the recording is no good.

However, with the two previous examples I had a lot more trouble getting the qualifiers (then, suddenly, yet still / unexpectedly) to work in translation:
