When should I use sink instead of deep?

They both have completely different meanings. You could not use sink instead of deep. It would not make sense.

Please give an example sentence or a bit more context.

Sink is a verb:
“I hope that the boat doesn’t sink”

Deep is an adjective:
(adj) “The ocean is very deep”

Let me explain better. I was reviewing the following text: Login - LingQ and when I went add LingQ in that word, it gave me “deep” or “afundar” (in portuguese) which means “deep”.

If my memory serves me correctly, a sink is where you wash your hands and face.

On second thought, it would have made more sense for the sailors in the sinking boat to have learned German.

Now I am picturing the poor English sailors furiously trying to work through Who Is She? on LingQ while their boat is sinking.
