You could say “poke someone’s eye”, but it does not sound natural. “Poke someone in the eye” sounds more natural, and the most natural-sounding is “poke someone’s eye out”.

I agree with jostroot. I would either say ‘you’ll poke someone in the eye’ or ‘you’ll poke someone’s eye out.’
