I saw a line from a movie as below:
I’m just so content taking care of other people’s pets when they’re away for the holiday.

The verb after content as an adjective should be V+ing?
Do you use that? Is it proper?

Yes, that’s proper. You could even use the infinitive, making it “I’m just so content to take care of…” and it would still make sense.

@rhess is correct. Grammatically, your example may be a short (and more common) way of saying, “I am so content when/while I am taking care of…”.
