The original sentence - Wenn er mit den Gaesten spricht - is correct. The reason being is that the some German words, such as ‘wenn’, are used to begin a subordinate clause. The above sentence is incomplete, and requires more to it.

For example -

Wenn er mit den Gaesten spricht, bekommt er Angst.
Er bekommt Angst, wenn er mit den Gaseten spricht.

In German in the subordinate clauses (after the conjunctions ‘wenn’, ‘weil’,‘dass’ etc) the verb is always at the end of the phrase, for example:
Ruf mich an, wenn du frei bist.
Ich weiß, dass du auf mich wartest.
Ich bin nicht sicher, dass er uns versteht.
