J'avais bien compris le sens de fed, mais c'est les deux mots ensembles (glacier-fed) que j'ai un peu de mal à comprendre.

Hello, just to make sure that you also get an English explanation: the glacier feeds the rivers = the water in the brooks, streams or rivers comes from the glacier.

hahajeries, this is not uncommon in English. You will also encounter, for instance, customer-approved (approved by customers), student-led (led by students), man-made (made by humans) laser-etched (etched by lasers), and so on. A search online will find examples of usage.

It is more correct to write, "they are mostly glacier fed." No hyphen is written when the term is used in the predicate. A hyphen is written when the term is used attributively (to the left of the noun it modifies).
