If I wanted to say "what did you get for your birthday", could I say "what did you get you for birthday?"

Nope. Only the first is correct. You could ask, I suppose, ¨What'd you get yourself for your birthday?¨ But that would imply that you bought your own birthday gifts - which is rather sad, indeed.... :/
