What is the difference between Buenas and Buenos? Or when should one be used vs the other?
It depends of the gender of the word, I mean, “dĂas” is a masculine gender word and their adjective (buenos) must to be in a masculine gender too "buenos dĂas! “Tardes” and “noches” both are femenine gender words, so their adjective must to be in the same gender “buenas tardes” / “buenas noches”

La noche /Las noches
La tarde /Las tardes

How do I know if a word is feminine or masculine?

I completely agree. I would specially recommend reading. You see common words over and over with the apropiate article gender. Finally it becomes natural.
